Gluten Free Dairy Free Pineapple Cake
Ingredients
Cake
2 cups Gluten Free Flour Blend
1 Cup Organic Cane Sugar
2 Free Range eggs
1 Teaspoon Baking Soda
1 Teaspoon Vanilla Extract
3/4 of a Fresh Pineapple (cubed) or a 20 ounce can of crushed pineapple (undrained)
Instructions
Mix all of the cake ingredients together in a bowl.
Pour into muffin tins and top each muffin with walnuts
Bake at 350F for 30-35 minutes or until tops are golden brown.
